A refreshing drink from Jakarta
Ingredients:
1 pineapple, cleaned, eyes removed, cut in small chunks, 500 g
2 hen’s egg yolks
225 ml sweet condensed milk
50 g ground sugar
1/2 tsp ground vanilla
1 tsp salt or to taste
150 ml potable water
200 g fermented ketan hitam (black glutinous rice) 50 g fresh strawberries, washed, cleaned
Method:
1.Put pineapple, egg yolks, sweet condensed milk, ground sugar, vanilla, salt and water into a blender and finely blend.
2.Let come to the boil over low flame for about 10 minutes.
3.Take from flame and put into a suitable container and put into the freezer. Let stand until softly frozen.
4.Serve pineapple sherbet with fermented black glutinous rice and strawberries on top.
